Hi there and happy weekend! The sun has finally made an appearance in Boston, so the city is waking up from the long Winter and what seems like a longer, rainy Spring. I took advantage of it this morning and strolled down through the Farmer’s Market and the North End and worked up quite an appetite. Needless to say, by the time I arrived home I was ready for something healthy, easy and fast. Here is your practical Avocado Toast with (imperfectly) poached eggs.
